Grounding Autumn Tahini Veg by Kate O'Donnell

This is a beautiful roasted veg recipe, full of autumn root veg. The heavy, moist, sweet qualities are exactly the antidote we need to help alleviate some of the symptoms you may be experiencing. I love this recipe as a topping for my kitchari when I’m doing my Autumn cleanse

Ingredients

🍂 2 medium beetroots

🍂 2 carrots

🍂 2 parsnips

🍂 1/2 butternut squash

🍂 2 tbsp ghee or coconut oil

🍂 1 tbsp Tamari

🍂 1 tbsp chopped fresh rosemary or some fennel seeds.

Method

Heat oven to 190, Peel and chop all veg to same size, allow ghee/oil to melt in oven for a few mins then remove and add all veg plus tamari and herbs. Bake for 30-40 mins, stirring half way.

Sesame seeds are an awesome source of nourishment and moisture so make this Sauce to serve with your veg.

Ingredients

🍂1/2 cup tahini

🍂 2 tbsp olive oil

🍂 juice 1/2 lemon

🍂 1/2 tsp salt.

Method

Mix all in a large bowl and serve
