Jasmine Hemsley's Stewed Apples with Cinnamon & Star Anise

This is my go to recipe for a light breakfast, especially when I am cleansing. It is especially comforting on cold, windy mornings and it is Tri-doshic so all types will benefit from this.

Stewed apples is an ayurvedic classic. Apples are a great source of Vitamin A & potassium, cinnamon is medicinal and anti-inflammatory and cloves are metabolism-activating and great for oral health. It is tri-doshic, can stimulate the system, build an appetite for lunch and increase vitality and alertness.

Ingredients to serve 1

1 apple, cored and peeled (if skin is thick)

5 whole cloves

1/4 cup water (more if pan is not very small)

1 star anise

Pinch of ground cinnamon

Preparation

Cut the apple into quarters or chunks. Add it to a very small pan with the cloves, water, star anise and bring to the boil. Lower heat to simmer, cover & cook for approx. 5 minutes or until tender. Add the cinnamon, remove from heat and allow to sit for 10 mins. Serve.
