Jasmine Hemsley's Banana Bread

Ingredients for one large loaf:

290g Buckwheat Flour

2 Tsp Baking Powder

1 Tsp Baking Soda

1/2 Tbsp Ground Cinnamon

1/4 Tsp Sea Salt

4 Ripe Bananas, mashed + 1 Ripe Banana Sliced

120Ml Water

1 Tsp Vanilla Extract

60g Raisins

30g Walnuts

Lightly Salted Butter to serve

  1. Pre heat the oven to 180 degrees (fan 160/gas 4). Mix flour, baking powder, baking soda, cinnamon & sea salt together in a large bowl;

  2. Mix the mashed bananas, water & vanilla together, then add to the bowl. Mix in the raisins, walnuts & remaining banana slices;

  3. Transfer to a 750g loaf tin lined with baking parchment. Bake for 25 mins, then turn the tin around and bake for another 15 mins until it is firm-ish to touch. Allow to cool then slice and serve with butter (Kapha types only eat occasionally and skip the butter).
